WINEMAKING
Within the first half of October, the grapes are handpicked, upon entering the winery they are crushed, destemmed, and then follows the alcoholic fermentation in stainless steel at a controlled temperature with targeted pumpovers and rack and returns. A few days after fermentation, the malolactic fermentation takes place. The wine then undergoes the first racking to blend the varieties and rests on fine lees. Aging in French oak Tonneaux for 2 years.
